Amber's Whipped (melt in your mouth) Shortbread cookies
2 cups butter
1 cup icing sugar
1/2 cup cornstarch
3 cups flour
Whip butter for 3 minutes until fluffy. Mix icing sugar, four and cornstarch together then add to the whipped butter. Whip together for another three minutes.
Drop onto an ungreased cookie sheet lined with parchment paper.
Optional: add sprinkles or maraschino cherry to each one.
Preheat oven to 375 degrees and cook for 12 to 15 minutes. Cool and enjoy. Makes 24 cookies.
