Ginger snaps are a special Christmas treat

"Use more molasses," Mortensen advised when she provided her recipe.

Try both recipes, and after tasting, you can decide who the New Westminster ginger snap queen is.

MARYANN MORTENSEN'S GINGER SNAP RECIPE

Cook at 350 F for 10 to 12 minutes

3/4 cup of margarine One cup of white sugar

1/4 cup molasses (but see Mortensen's advice about more molasses)

One egg

Two cups of flour

Two teaspoons of baking soda

One teaspoon of cinnamon

1/2 teaspoon of cloves

1/2 teaspoon of ginger

Pinch of salt

One cup of raisins (optional)

Combine all dry ingredients except white sugar in one bowl and set aside.

In another bowl, combine the other ingredients, including sugar, and mix well.

Slowly add other dry ingredients until all is combined.

Roll the dough into one-inch balls (approximately), then roll in white sugar.

Place on cookie sheet and bake at 350 F for 10 to 12 minutes.
